Rice salad with squid and green Apple
The recipe for this salad was found me a year ago at a culinary publication. Hearty, delicious salad of squid and Apple. Cooked very quickly and simply. Suitable for the Lenten table, for those who are dieting and not only. Invite!

Green Apple and cucumber peeled and cut into thin strips.

To cook rice I prefer in a double boiler, but you can in the usual way. For this salad, I chose the rice variety "Basmati" from TM "Mistral". So, the rice, wash thoroughly, fill with water and boil until tender. While preparing the rice, make dressing. Olive oil (4st. L.) mixed with a few drops of Tabasco, add salt and pepper to taste and 2 tsp lemon juice. Now during lent, this filling would be sufficient. If You do not observe fast, in this case, the gas station can add a few tablespoons of natural yoghurt.

Next, turn the squid. For this salad you can take the already cooked squid. If You have fresh (I shredded), clean it and boil. In a saucepan, pour water, salt, add 2 peppercorns, 1 Bay leaf and a lemon wedge. Bring water to a boil and cook the squid for about 4-5 minutes from re-boiling. Then the water is drained, dry the squid and cut into strips or rings, as you like :)

Then boiled rice mixed with finely chopped parsley and green onions (2-3 pen), added squid, Apple and cucumber. Carefully stir and fill. The salad is ready, help yourself!
