Cooking
Preheat the oven to 190 C. peel off the white from the yolk and whisk the whites with a pinch of salt in a solid foam.
Whip the soft butter (1 tbsp) sugar (2 tbsp ) in a homogeneous lush mass.
Add the sifted flour, egg yolk, vanilla and knead the dough.
Gently combine the dough with beaten egg whites. Spoon the batter into kinetic.
Take silicone molds for cupcake, turn it over (bottom up)
test and draw the basket. I got 8 pieces.
Put tarts on a baking sheet
and put to bake for 10 minutes in the oven.
Give the baskets to cool, remove from the mold and filled caramel cream.
To prepare the cream, cook 4 tbsp sugar, 1 tbsp water, lemon juice, 1 egg white and a pinch of salt. Add in chilled protein a pinch of salt and whisk with a mixer until thick foam (the peaks).
Mix sugar with water and citric acid. Put the saucepan on a medium heat, bring to a boil and cook stirring over low heat until until a drop of caramel will not harden in cold water. That is, take a little syrup dropped in a glass of cold water should form a ball.
In chilled whipped protein without turning off mixer, pour it into the sugar syrup and continue whisking until cool cream. It turns out thick stable cream.
