Cooking

step-0
I want to just clarify that for children, this dish is perfect after 3 years, because eggplant is not recommended before this age, but you can substitute eggplant for zucchini, then your child in 2 years will be able to share your meal. If You prepare for the baby, it is better to use chicken because I was cooking for myself with my husband, I cut up a chicken into pieces, put in slow cooker, sprinkle with a mixture of curry and paprika and set to simmer for 15 minutes.
step-1
Until cooked chicken, peel the eggplant, cut into slices and pour some ice water with a teaspoon of salt. This will help to remove all of the eggplant bitterness.
step-2
We take out our chicken from the slow cooker, instead, put eggplant and simmer for another 10 minutes.
step-3
Coarsely chop the vegetables in the stew very well for large pieces.
step-4
Add the vegetables to the eggplant, simmer for another 5 minutes.
step-5
Put the chicken to the vegetables, add the tomato (I use Pomi, which is 100% tomatoes)
step-6
In a slow cooker, I have a VITEK VT-4205 BK, choose again simmer for 30 minutes. Close the lid and wait for the coveted signal.
step-7
The finished dish sprinkle with fresh cilantro and serve. It can be eaten both cold and hot.
