Carrot-walnut cake

4 eggs, 160 g sugar, rum and vanilla sugar and whisk. Whisk for a long time - 7 minutes, until white and creamy. Rum is not required, but it is more aromatic. I added rum extract.

Carrots wash, peel and grate on a fine grater - the smallest. Carrots for this recipe take sweet, colorful and delicious! Squeeze carrot juice by hand or with sieves and spoons. Juice can drink, and cake add to the batter.

Sift flour with baking powder, add the ground nuts and mix well.

Add nut-flour mixture to the batter and mix well. I was stirred with a mixer.

The consistency - like a thick cream.

Oven included 180 degrees. Form diameter 26-28 cm ( I 26 cm ) with baking paper and pour our dough. Bake for 50-60 minutes. Readiness check wooden torch.

Meanwhile, prepare the cream. Dry powder pudding dilute a small amount of orange juice. Soak the gelatin in a separate bowl.

The rest of the juice, 80 g sugar put in a saucepan, cook until sugar is dissolved. Remove the pan from the fire, a thin stream, stirring, enter the pudding. Return to stove, bring to a boil and cook for 1 minute. Remove from heat and hot pudding pressed enter and dissolved gelatin.

Pour hot pudding into a bowl and cover the entire surface of the pudding with cling film. Film put directly on the pudding so we will avoid brown. Leave to cool.

Whisk the cream to peaks. To the cooled pudding, add whipped cream and sour cream. Cream mix well until smooth and glossy state. I beat all with a mixer.

A long, sharp knife cut the cake into two halves. Very pleasant, fragrant and crumbly structure of the test!

I bet the ring for cake and filled jelly. Jelly can and probably out of the pack - but I made by adding 250 ml of orange juice 4 plates of gelatine dissolved and filled the cake. The sides and top and decorate as they wish - I have whipped cream!
