OPARA. 50 g of sourdough refreshed, 100 grams of milk, half sugar, half oil and butter, 200 g flour. Knead well to a soft moist dough, cover and leave at room temperature to rise for 8-12 hours (with warm milk faster, cool longer), very easy to do on a cold milk at night. DOUGH. The whole sourdough + 400 grams of warm milk, + remaining sugar, oil and butter, salt, you can add 1-2 eggs (I have not added). Flour - how much dough. I took 600 grams of flour. The dough must be very well stirred. In the bread maker 30 minutes. Hands - method of folding (stretch the dough in the seam and fold it several times, after 5 minutes back to stretch and fold, and so within 30-40 minutes). The dough is very delicate, pleasant, does not stick to hands.
Form pies with filling (you can just buns), spread on a baking sheet covered with parchment paper. Nastaivaju in a warm (30-35C) place an hour and a half. Cakes cover with cling film, for this test it does not stick. They slightly increase in size.
Before vypechka I greased the pies with milk (eggs was not ))) Bake patties in preheated oven at 190C for about half an hour. When they are slightly cooled, to shift them in the package they were soft.
