Cream soup of zucchini with Basil
Easy, flavorful and quick soup. If you need to quickly feed the family, especially its female half, this is a great option. Though sometimes the male half is being connected (but in men it often happens that Basil is not always easy to do, so here it is a matter of taste). This soup I just love, honestly. Long saw it from someone in LJ, since in the season of zucchini is a frequent guest on our table.

Ingredients

  • Zucchini

    2 piece

  • Basil

    1 coup

  • Butter

    2 Tbsp

  • Soy sauce

    3 Tbsp

  • Cheese

    50 g

  • Baguette

    3 slice

  • Seasoning

1. Zucchini wash, clean. If the seeds are already solid, then remove the core. Cut into large chunks.

2. Zucchini put it in a pan, cover with water (you can use vegetable broth) to barely cover the squash, add a pinch of Provencal herbs. Cook zucchini until tender (about 15 minutes). Finely chop the Basil, grate the cheese. Add to the zucchini butter, grated cheese, Basil and remove from heat.

3. Add the soy sauce and use a blender to grind to puree.

4. Baguette cut into pieces, dry them in the oven or in the toaster. Pour into a soup dish, put a slice of baguette, top pour a little of the soup and serve immediately.
