Cooking
Prepare the vegetables.
Eggplant peel (this is optional) and cut into small cubes.
Peppers and onions also cut into cubes and carrots RUB on a coarse grater.
Boil eggplant in salted water 10 minutes. Just don't overcook, and it will be a mess. Drain off water and cool.
Mix the oil, pepper, salt, sugar and vinegar. Add chopped parsley and garlic.
Put all the vegetables in the marinade and stir. Now spread the eggs in sterile bottles 0.5 l, cover, put in a pot of water (approximately the middle banks) and sterilize them for 10-15min. After that roll up. Exit 6 cans of 0.5 liters.
If you want to eat now, not in winter... it will have to wait a day or 2. The calf must be promarinovatsya, this put it in the fridge and forget it for a couple of days. But then enjoy an incredibly delicious dish. PS First time I tried this the eggs just cooked - she did not like me terribly, and I couldn't understand why everyone loves it. But after the necessary time, I succumbed to the entreaties and again "tasted"... couldn't stop myself and ate half the quart jar of caviar :).
