Sand cake with cherries
In one of Odessa cookery book a very interesting read in my opinion the recipe for the cupcake, slightly changed it and added. And that's what happened.

Ingredients

  • Butter

    200 g

  • Sugar

    5 Tbsp

  • Chicken egg

    3 piece

  • Cognac

    1 Tbsp

  • Soda

    0.5 tsp

  • Potato starch

    1 Tbsp

  • Cherry

    150 g

  • Cocoa powder

    1 Tbsp

  • Vanilla

    0.25 tsp

  • Orange

    0.5 piece

  • Cinnamon

    0.5 tsp

  • Flour

    1 cup

Blend butter with sugar, add the eggs one by one and all beat well. Then add the brandy, baking soda quenched Apple cider vinegar, starch and flour.The batter should be the consistency of thick cream.

In cherries add the cinnamon(I do like dried cherries and cherry from the jam, it turns out equally delicious). Divide the dough into two parts. In one add cocoa and mix, add 1/2 of the cherries with cinnamon. The first part of the layer on the bottom of the form (the form preferably covered with parchment).

In the second part of the test to squeeze the juice of half an orange, add the vanilla and the remaining cherries. Spread over the first part.

To create the effect of marbling several times to cut the dough with knife in different directions. The surface of the dough to align. A form of fruitcake to put in a cold oven. Cupcake bake at 180C for about an hour. Then the oven off and leave the cake for another 15 min to dry. The readiness check with a toothpick.
