Prepare the needed products.
First make the sauce, in a deep frying pan. Melt the butter without letting it boil and darken.
Pour in the flour, quickly stir and fry for about 4-5 min. with continuous stirring. Fire average. Then gradually, stirring, pour in the broth, best to use a whisk to prevent clumping.
Add to sauce the cream, we get beautiful, thick, and most importantly, very tasty sauce. Leave it to slowly simmer on very low heat. From time to time stir to avoid the film.
Now for the fish. If perch fillets too thick, as I had to tap it lightly to a thickness of about 1 cm. Cut each fillet in half lengthwise. Season with salt and pepper.
Salmon also cut into pieces the same thickness strips of fillet of perch. For each striped bass fillet spread a teaspoon of cream cheese, sprinkle with dill, spices.
On the wider strips of perch to put a piece of salmon, fold rolls, secure with wooden toothpicks.
We get 6 rolls. Put them in a pan with sauce, cover. The rolls simmer in the sauce for about 15-20 minutes, turning them once during this time.
While preparing the rolls, have beets. Cut a nice beet, huh, so that happened 4 slices thickness of 0.5 cm.
From each circle, cut out a heart with a recess for cookies or just with a knife.
In a saucepan heat the marinade of vinegar, 50 ml water and sugar. Put hearts out of beets. If the beets are raw, then boil on low heat for 5 minutes if the beets are already cooked, then just leave it in the hot marinade.
Residues from beet juice, we'll need about 1 tablespoon of juice to color the sauce and a few drops of the drawing. Meanwhile, put the finished rolls on a plate, cover with foil to keep warm. Add beet juice to the sauce, which taste does not change, but becomes a beautiful pink color. Finger dipping in the remnants of the juice and draw hearts on the plates, the symmetry does not seek, so interesting!
Fill in the hearts on a plate with sauce, it is thick and does not spread, which is very handy.
At the heart of the sauce spread on three rolls, removing toothpicks. Decorate all the greens and hearts of pickled beetroot, which is a nice contrast with the creamy taste of the fish.
