Cooking
The first thing I decided to get rice flour. Figure grind in a coffee grinder and sift through a fine sieve and voila! The rice flour sifting wheat, add the zest of one orange and half of the thyme.
Remaining thyme mixed with 25 g of sugar, we need it later. I used sugar Mistral Demerara fine, it's just what you need - it is quite small and very caramel. To the flour add the diced cold (!) butter, with your fingertips to grind until the crumbs.
Chocolate melt in a water bath, add to flour mixture, also add the remaining 25 g of sugar. Mix with a spatula, then put the dough on the Board and form a sausage. Wrap in plastic wrap, put into the refrigerator for 1 hour.
Preheat the oven to 180 degrees. Roll sausage in thyme with sugar, cut into slices. Bake for 15-20 minutes until Golden brown.
