Description

Pork rinds here in Karpatski
Sometimes in gatherings you want something special, delicious for appetizer. Chips, shrimp, squid and so on have somehow become boring. I wanted something new for my beer. Thought and decided to prepare hooves for this recipe, but a bit simplified. The only change was the addition of liquid smoke for the smoked taste, but it is possible without it. Hooves can also be served as a main dish with side dish and vegetables.

Cooking

step-0
The first thing you need to clean and wash the hoof. Then pour water and put on fire. Once the broth is boiling, drain the water and put on the boil again. It may be necessary to remove the foam.
step-1
Once foam is removed, throws it into the broth: carrots, onion, garlic, Bay leaf and pepper. Leave it boil for 2 to 3 hours depending on the size of the stems. I was not large, approximately 0.5 kg were boiled for 2.5 hours and a bit overexposed. Do not forget to add salt!
step-2
Start the sauce. Mix all ingredients together: sour cream, tomato paste, sweet paprika, chili pepper, salt, allspice, garlic, cumin (optional, I did not put) liquid smoke ( I added, but it is possible and without it), and give a little to stand until our feet from this.
step-3
Once the legs are cooked, remove them and allow to cool a little. I cooked 2.5 hours they got you this time a little crumbly. Ideally they should not depart from the bone. Once the legs a little drain. and cool, grate them with sauce and put in the oven for 30 minutes and cook at 200 degrees. This time I was preparing in aerogrill on average lattice at 200 degrees for 30 minutes
step-4
Here it turns out so yummy! Bon appetit!
