Cooking
Out of this number of products I got two small cake. Shape with a diameter of 15 cm. First make the stuffing. Eggplant cut into small cubes, sprinkle with salt and set aside for 10 minutes.
Pork cut into small cubes.
Fry in preheated pan with a little vegetable oil onion until Golden brown. The liquid, which is glazed with eggplant poured into the shell, lightly squeezed the slices of eggplants are sent with the pan to the onions. Fry over medium heat for about 5-7 minutes.
The eggplant and onions add the pork and cook for about 7 minutes.
Ready stuffing add salt, pepper. Remove the filling from the heat and leave it to cool.
Butter room temperature, mix with salt and sugar.
Gradually enter the sifted flour, continuing to interfere. As possible I interfered with a spoon, to prevent the oil from spreading. Knead the dough. Roll a ball, cover it with cling film and refrigerate for 20 minutes. During this time the dough will acquire the right texture and the filling has time to cool down.
Take the dough from the refrigerator and divide it into 2 parts. Each of the two parts divide into two unequal parts, one bigger (for base of cake), another smaller (for the top). While I was working with one half, the second was removed in the refrigerator. Roll out the dough too thin.
Winding the rolled out dough over the rolling pin and transfer to the form. I have clay molds, I did not oiled and not covered, as the dough itself was quite fatty. If you worried that will stick, grease with vegetable oil. Align the edges, remove excess dough. Pinned the bottom with a fork so the dough does not swell.
The second part of the test roll out and cut with small glass circles. You can not do that and just rolled out to cover cake layer.
Sprinkle with grated Parmesan or any other hard cheese.
Put the cut slices in a circle overlapping. Grease the top of the pies lightly with the beaten egg and put into a preheated 180 degree oven for 30-35 minutes.
