Dorayaki
Continue to explore Japanese cuisine and decided to try something sweet. I suggest all to join me!

Ingredients

  • Chicken egg

    3 piece

  • Sugar

    1 cup

  • Honey

    2 Tbsp

  • Soda

    0.5 tsp

  • Water

    75 ml

  • Flour

    1.5 cup

  • Condensed milk

    1 can

  • Lemon

  • Pasta, peanut

Let's start with the test. Make it pretty easy, especially if you have a food processor =) If not, then fit the whisk. The main conditions - do not mix rapidly and observe the sequence since I did it all in a food processor, I'll write about it. First take the eggs and lightly whisk them.

After that you add to the eggs sugar and honey. Mix.

Dissolve the baking soda in the water. Pour all this to the test, again slightly miscible. The dough should be homogeneous and, oddly enough, yellow color =)

And finally, add the flour, all mix thoroughly to avoid lumps.

Then cover the dough with cling film and leave for half an hour.

And now for the tricky part - baked pancakes. If you are going to cook, we suggest that this step carefully and the points or you will repeat my mistakes) the Dough consistency should be like condensed milk. If it turned out a little thicker, add a couple of tablespoons of plain water and mix thoroughly. I usually add 4 tablespoons. Heat the pan, because the Japanese kitchen suggests a lack of vegetable oil, the pan we only slightly (I usually use a piece of gauze) grease to the crepes easy to flip. Then, we pour the batter into the pan (as pictured) and start to fry. Once the pancakes are covered with bubbles, we turn. On the other side we fry no more than 10 seconds otherwise you will burn.

After, remove them and put on paper towel/towel to remove the remnants of vegetable oil. Therefore, we do the rest of the pancakes. They should be round and there should be an even number.

The filling for the classic dorayaki is made from adzuki - sweet Japanese beans. Searching online, I found the reviews of our compatriots in these beans. The reviews were not very positive) Therefore, instead of looking for where you can buy these beans, I started to look for possible options. I found out eventually that filling for dorayaki can be absolutely anyone. She can be sweet, salty or even be missing if you so wanted.

But for the filling there is one condition - it should be thick. So I chose two kinds: Nutella and cream with condensed milk. The cream is simple: with a mixer beat butter (softened), condensed milk and lemon juice. After slightly frozen in the refrigerator and can be spread (as shown in photo).
