As You have noticed, I love easy to prepare recipes. Like loved ones surprised, and a lot of effort is not made. This snack belongs to the category of such recipes. Very very tasty, a little tangy and just great!

Cooking
Boil the rice in salted water until tender. Cool.
While the rice cooks, wash the eggplant, wipe with a paper towel and make a few punctures on one side. Lay the eggplant in a bowl pierced side up. I baked in the microwave: 10 minutes at a power of 800 Watts. You can use the oven: cook at 200°C for 30 minutes, after 15 minutes of cooking the eggplant should turn. Ready eggplants to cool, remove the skins, and the flesh is mashed with a fork.
Garlic peel and finely chop. Mix with 1 tbsp lemon juice, salt, chili pepper and mayonnaise.
Rice mixed with eggplant, add the breadcrumbs and garlic in a mayonnaise dressing. Mix thoroughly; shape balls. Optional garnish with lemon.
