Corn pancakes
Cacapa (cachapa)-a traditional street food of Venezuela, which is popular in roadside cafes. This is a dish my husband caught a glimpse of one cooking TV show and was eager to try these pancakes. It is done! Will bake Cachapa!

Ingredients

  • Corn

    3 cup

  • Corn flour

    0.25 cup

  • Salt

  • Black pepper

  • Seasoning

  • Vegetable oil

    1 Tbsp

  • Mozzarella

    0.5 cup

The Cachapa pancakes are prepared from low products. As a measuring Cup, I used a multi-glass with a volume of 160 ml.

For the dough: from the cobs with a knife to remove the grain. Four medium ears I got 3 multi-cups of beans.

Immersion blender punched grain to desired consistency. The original recipe allowed whole grains of corn, I ground the grain until smooth. Add the cornmeal and salt and pepper to taste. Seasoning "Mexico" at will. And again all whisk blender.

On medium flame, heat the pan, lubricated it with vegetable oil. Spread a small amount of corn dough, even out, forming thin pancakes-tortillas. One pancake took me 1 tablespoon of dough.

Fry pancakes on medium heat on both sides until Golden brown ( 3-5 minutes each side).

Each pancake without removing from the pan, sprinkle grated mozzarella cheese and wait until cheese is melted (about a minute)

Remove the pancakes from the pan and fold in half with cheese inside.

Cachapa is served immediately. I set the pancakes on lettuce leaves, with cherry tomatoes and with fried crispy bacon.
