Rustic tart with grapes and rosemary
Baking with grapes is always very tasty. And taste of this tart is very bright, I would even say, flashy, thanks grape :) Still there are a lot of nuts and charming rosemary notes. It is very juicy and flavorful. Flavor combinations in perfect harmony :)

Ingredients

  • Flour

    1.25 cup

  • Salt

    0.5 tsp

  • Sugar

    0.5 tsp

  • Butter

    115 g

  • Water

    5 Tbsp

  • Grapes

    900 g

  • Walnuts

    0.5 cup

  • Rosemary

    0.5 Tbsp

  • Brown sugar

    5 Tbsp

  • Honey

    1.5 Tbsp

Cooking

In the bowl of a food processor, combine flour, sugar, 1/2 tsp salt and butter. Whisk to a state of fine bread crumbs. Add 3 tablespoons of ice water and whisk again until the dough start to gather into lumps. Water may need a little more. Quickly knead the dough by hand and refrigerate for 1 hour.

For filling, combine grapes, walnuts, a pinch of salt, rosemary and brown sugar (more or less depending on how sweet/sour grape).

Preheat the oven to 180 degrees. On a sheet of parchment paper roll out the dough into a circle with a diameter of about 30 cm circle and spread with honey or thick syrup from the jam.

Transfer the sheet with dough on a baking sheet. Carefully put the grapes in the center. The free edge lift and arbitrarily samaita.

Bumpers brush with milk or slightly beaten egg white, sprinkle 1 tbsp brown sugar.

Bake for about 40 minutes. The crust should be brown and the grapes are slightly wrinkled.
