These potato pies I learned to make grandma. Since then it's been 5 years and I still have not tasted better. Simple to prepare and very tasty.

Cooking
Knead the dough. Mix in a bowl the yeast, salt, sugar, mix and add warm water. Give 5 minutes to swell the yeast, then add the vegetable oil and mix again. (My grandmother just added another shot of vodka, so the dough will be more lush. My vodka was not, so I did without it). Begin to add the sifted flour and knead the dough. Don't forget to grease your hands with oil, the dough will become more manageable. It loves hands, so knead it at least 20 minutes. Put the dough in the bowl, cover with a towel and set in a warm place for 40 minutes. Because on the street summer and the battery is not warm (where I usually put the dough), I propose to turn the stove on and put around. It is very important that the bowl not much heated, every 10 minutes turning the bowl, so the heat will be on all sides. It took 40 minutes, you need to press down dough and leave for another half hour.
Filling. The potatoes are cooked, add the butter, mash it quite a bit. Not need to be whipped like mashed potatoes, inside will be mushy.

It has been 30 minutes, take the dough and split it into small balls. Take the dough, make in the middle deepening and put our potatoes with onions, zasiyaet edge and shape of the ball. Pour oil in a pan and watch for the oil to become very liquid. Fry the patties on both sides. Patties put in a bowl (plate) on the bottom of which is pre-placed paper towel or napkin.
