Cottage cheese dessert
Airy, delicious and delicate dessert. With chunks of dried fruits, nuts and fragrant with the zest of ripe orange. Cooks very quickly and just as quickly eaten. Surprise your loved ones with this delicate dessert!

For this dessert I used brown Demerara sugar from the Mistral. For which I thank Larissa "Stall"

Curd (yogurt) mix with sugar, we'll beat until until the sugar crystals dissolve as best you can. The amount of sugar I recommend adjusting to Your taste. Though I am a huge sweet tooth, but when I made this dessert the first time - for me, sugar was a bit much. This time, the amount of sugar I reduced to 90g.

Gelatin (I used leaf) soaked in cold water for 5 -10 minutes (if gelatin granules or powder, then it is better to soak in warm water. And then as usual. Heat in a water bath until the gelatin is completely dissolved). Then squeeze the gelatine and heat in a water bath. A few spoons of cottage cheese mixture, add in the gelatin (it is better to add gradually 1 tablespoon) and then add to the rest of the cheese.

Apricots thoroughly washed, pour boiling water and leave it soak in hot water for 15-30 minutes. Over time the water from the dried apricots, drained and blotted with a paper towel or towel. Cut into small cubes. They should fry (I bought already roasted nuts) until it will turn brown in a frying pan without oil and finely chop. Then add the chopped apricots and nuts, orange zest (optional) to curds

Thoroughly mix the mass and put into molds. Refrigerate for 2 hours. After time to get our dessert and gently hold a thin knife along the walls of the molds. That's it, dessert is ready. Spread on plates, decorate as desired.
