Pie
Crystal delicious pie with pears, tender, moderately sweet, fragrant pear is very tasty! Instead of pears you can try to use apples, but I highly recommend the pear. Try to cook!

Prepare the syrup for the pears. From orange squeeze juice, with lemon remove the zest.

Add to the syrup 200 g sugar. Pour the hot boiling water (300 ml) and stir until the sugar is dissolved. Then add 300 ml cold water and stir.

Bring syrup to a boil and put in a pot of pear. And on low heat bring the pears until soft, ~5 min.. How pear changed color, they become brown, remove from the syrup. Do not overcook, they will reach when baking. Pear syrup is filtered and cooled.

Prepare the crust for the pie. Mix salt, baking powder and sifted flour (300 g). Add the softened butter and grind it with flour.

In a bowl whisk together 2 eggs 1 c St. L. sugar. Add 1 tbsp lemon juice, 5 tbsp milk and vanilla sugar.

Mix the egg and flour mixture. It turns out thick dough.

Put the dough in a package and put into the fridge.

After 30 minutes take the dough out of the fridge. Take a baking dish, (I have a form with a diameter of 22.5 cm, height 5 cm). Roll out the dough on the Board first and then put in a greased form, distribute the form, forming the sides. And again the form with the dough put into the fridge for 30 minutes.

Cover the bottom of the pie with foil or parchment, evenly distribute and fill it with peas or beans. Preheat the oven at t 200 C and put in to bake the cake for 20 minutes. Then take out the cake, pour him a pea, remove the foil and send it for another 5 mins in the oven.

To prepare the cream, mix the flour (2 tbsp) sugar (2 tbsp). Add to the dry mixture of 125 ml pear syrup, 1 tbsp lemon juice and whisk continuously with a mixer. In a separate bowl whisk 2 eggs with sour cream. Connect both mass and mix. The cream is ready. For consistency it is a liquid. In the baking process it will thicken.

Take a pear, cut the bottoms so they are sustainable and put them on the bottom of the pie.

Pour the pears cooked with cream and bake the cake at t 180 ° C, ~25 minutes, the cream should thicken. Give the cake to cool completely.

In the meantime, prepare the sauce for the top of the pie. To do this, in the remaining pear syrup (I was left with 450 ml + 1-2 tbsp lemon juice), add gelatin, give him time to thicken. Then put on a quiet fire, bring to a boil, but do not boil and remove from heat, allow to cool.

Gently pour "crystal-fill" for pears over the cream and put the cake in the fridge. I froze filling for 4 hours. To the table you can serve this pie with a scoop of vanilla ice cream.
