Eggplant cut into "tongues" with a thickness of 3-4 mm. you Can just cook the normal way for you, and you can, I moisten them in the protein. When frying eggplant, dipped in protein, absorbed much less oil and less smoke. So, I never added oil during frying.
Beat the whites with a fork with a pinch of salt.
Pour the whites into a wide container (I have a plastic container) and put in it the eggplants so that their entire surface has been wetted with white.
Fry tongues in a well-heated oil until Golden brown and spread on paper towel to remove the excess fat.
The beef roast first in a dry pan, then sprinkle with a little vegetable oil, salt, pepper and fry until ready. In the end add balsamic vinegar and soy sauce and fry mince for 1 minute. Allow to cool.
Garlic squeeze through the press.
Add the mayonnaise. I usually make it myself, but today did not want to, took the store :).
Add the chopped herbs and mix well.
Each slice of eggplant to grease with mayonnaise sauce.
Now spread the stuffing on one half of the eggplant.
To bend the slice in half.
Serve, garnished with parsley.
