Cod with shrimp in tomato-coconut sauce with curry paste. Lovely dish with hints of Thai! Thrill as we do! My husband and I are fans of Thai food and this fish curry is ready to eat once a week. Understand that not all parts of our country you can find such exotic products like coconut milk and red Thai curry, but from any position you can find the exit. How to cook a curry paste at home - write in the recipe (in fact I've done it before, until in a paste), and coconut milk can replace cream 20 %, adding 1 tbsp coconut shavings...not the original of course, but too bad...))) And here's a tip how to do without coconut milk - 100 gr. coconut pour 300 ml of hot water, mix in blender. Drain, you can not drain (this tip I heard a television programme). Yes, and do not ignore fish sauce, and preferably good quality! Good luck with experiments and delicious evening!)))

If You have sold out of coconut milk, you can find a replacement. I wrote about it above, in brief, (don't know why I decided to write there and not here in the recipe... well, I don't know..)))

This Thai red curry paste and fish sauce. Please do NOT confuse Thai curry paste with Indian spice curry!!! It is absolutely two different things!!! If You do not sell this pasta, it can be easy to prepare at home. In vegetable oil (about 2 tbsp) and fry finely chopped garlic (4-5 tooth.) and chilli (2 PCs), fry a few seconds. Add to the zest of one lemon, lemon juice - 2 tbsp, grated ginger (3 cm), a teaspoon of sugar and simmer for another minute 3-4-5. All the pasta is ready! Before I triturated in a blender, but then did not, the difference is no, we have so and so everything is finely chopped and nature (ingredients given for cooking one dish at a time... that's what I do and for Tom Yam soup).

In a saucepan heat the oil and lightly fry until soft onions (roughly chopped) and finely chopped garlic.

Add to the onions with a brown garlic paste, fry for 1-2 minutes.

Then add the pureed tomatoes and coconut milk. Bring tomato-coconut sauce to a boil, add fish fillets, bring to boil. How is boiling, add fish sauce, salt, pepper, sugar. Cover and on medium heat simmer for 15 minutes.

Add to the pan peeled shrimp, cook for about five minutes. Add chopped cilantro and turn off heat.

The side dish will go perfectly rice or couscous.
