I want to share a wonderful easy (!) tomato soup, perfect for lunch on a hot day. So fresh, flavorful, elegant and useful!!!

Cooking
Soup is a simple proposition, the only condition is a good, juicy, preferably homemade, tomato! So let's get started: wash tomatoes, drop in boiling water for a few minutes in order to easily remove the skin.
Onions clean from the husk, chop, fry until Golden. Peeled tomatoes cut into small cubes, add to the onions, season with salt and pepper to taste, simmer on medium heat under lid for 15 minutes - 20. The tomatoes will be quite soft. To shift the resulting tomato puree into a saucepan, add 1 liter of water, bring to a boil.
Cheese (I have Dutch + cheese) RUB on a small grater, a fork and mix with egg. Pour egg-cheese mixture to the soup, stirring constantly. Bring to boil, and the soup is ready!
Serve with chopped parsley or fresh Basil. Still very tasty add a spoonful of pesto sauce, turns out very elegant!
