Christmas gingerbread from dough seasoned
Gingerbread for Christmas, what could be better? Offer to bake gingerbread, but not simple, and designed test. Ingredients

  • Rye flour

    1 kg

  • Honey

In a saucepan with a thick bottom, place the honey, sugar, oil. On low heat bring to a boil. Remove from heat, remove the foam.

From cardamom, remove the seeds, place in a mortar, add the cloves and chopped-stars of star anise, grind into a powder. Or to grind in a coffee grinder ( which I did because really I'm too lazy to grind ) Mix cinnamon, ginger powder, mix well.

Add the spices to the hot mixture in the saucepan. Stir, cool the mixture to 40 degrees.

Then add the beaten eggs, flour mixed with baking powder. Knead the dough 20 to 30 minutes. Pretty easy to mix, although to be honest I had concerns.

Roll the dough into a ball, tightly wrap in cling film and put in the refrigerator in the crisper for a month.

A month later, unwinding the tape, the dough will resemble stone clay, but the Smell, Oh my God, what a SMELL, and I want to nip off a piece and devour.

Let the dough rest for about 30 minutes. Then weigh the dough, I got 2кг20 gr. Divided into two equal halves. Roll out each into a rectangle, on the already cut parchment, trim the edges, put on a baking sheet and bake in preheated oven to 200 degrees until tender about 15 minutes. Readiness, as always, to check wooden stick, it should be dry.

Spread one piece of bread, jam, top to put the second part ( very carefully, you need to let it cool down, otherwise you can break the bed). And a bit of my findings, the oil can replace conventional. that's what I did. Sugar better take the brown, I think he contributes a note to the Symphony of smell. Rye flour, it is advisable to purchase in advance and at least a month to hold the house, I think it becomes better in baking. Do not be afraid of hard dough out of the fridge, letting it warm up, it can roll, if call husband for help. The dough is quite brittle, so it is more convenient just to roll out and to flatten before baking. Hope it all works out.
