Cooking
Cauliflower disassemble on inflorescences. Blanch in boiling salted water for 2-3 minutes, drain in a colander.
Orange wash and dry it, to remove the zest. Cumin seeds (cumin) grind in a mortar. I love cumin, so I took her twice more than stated in the ingredients. Cabbage spread on a baking sheet, sprinkle with zest and cumin, pour oil, mix with hands and put bake in the oven, preheated to 170-180*C.
After 10 minutes pull the pan, sprinkle with walnuts (Jamie O uses pecans), return to the oven and bake for another 5 minutes.
Arugula rinse, Pat dry. Prepare the filling. Squeeze of orange juice, add oil, season with salt and pepper, whisk to mix.
To collect salad: on a platter cabbage with walnuts, arugula, pour with the dressing. I made the salad in two versions - for men added smoked meat (Jamie - ham). I can say that both are perfectly good.
