This dessert is one of the ten best desserts in the world. It was invented by French chef Auguste Escafe in 1892 or 1893. Somehow the greatest singer Nellie Melba decided to consult with the cook about what to submit for dessert, friends, peaches or ice cream. Doubts of a charming woman Monsieur Escaffi dispelled his skill and imagination. Gallant Frenchman invented one of the best desserts, which was given the name of the singer: vanilla ice cream with slices of white peaches and raspberries. Of course, today with precision to reproduce the recipe of the French chef is quite difficult, the exact recipe has not been preserved. Any change of the formulation destroys the delicate balance of its taste. Sometimes substitute raspberry puree strawberry marmalade or jelly of red currants. It completely changes the taste. Or peach served with whipped cream. The results of such experiments have nothing to do with the original recipe and can hardly bring joy to true connoisseurs."
Of course, you can buy ice cream and make a dessert very quickly, but I decided to cook it myself. And ice cream I have dairy low calorie. I took the fine sugar from the Mistral, rubbed it with vanilla seeds and powdered milk. Filled with milk, while 50 g. of milk is left. Vanilla pods put in the milk mixture.
Formula milk heated almost to boiling. In the remaining milk, stir the starch and poured into the pan. Warmed a little more until thick and mixture first bubbles. Removed from the fire, took out the vanilla pods, crushed slightly in a blender until smooth. The consistency is not very thick kiselak. Cool it under the hood first at room temperature, and then in the fridge.
While the milk mixture to the ice cream cools, prepare the peaches. They need to be cut into 2 halves, remove the seeds and boil in small amount of boiling sweetened water for 7-10 minutes (depending on ripeness). I found in February, fresh peaches, so I had to resort to canned.
Chilled milk mixture prepared in the freezer for 30 minutes, then put in the freezer for another hour.
For the raspberry puree I had frozen raspberries (thawed a bit) and small brown sugar from the Mistral.

So we have everything ready, it remains only to expand the beautiful all the ingredients in bowls. I just poured some in each bowl of 50 g of mashed potatoes, put a scoop of ice cream and decorated with slices of peach and raspberries. And then... the pleasure )))
