Easy and delicious vegetable salad.

Ingredients

  • Eggplant

    2 piece

  • Pepper

    1 piece

  • Tomato

    2 piece

  • Onion

    1 piece

  • Garlic

    2 tooth

  • Lemon juice

  • Olive oil

    2 Tbsp

  • Basil

    4 piece

  • Cilantro

    0.5 coup

  • Salt

  • Spices

Eggplant and bell pepper bake in the oven for 20 minutes or in a microwave with a grill. Hot vegetables put in a bowl and cover with a lid and leave for 20-30 minutes with these easy to remove skin.

Tomatoes, too, peel away skins, which make cross-cut and drop into boiling water for 1 minute, rinse with cold water. Onion finely chopped, rinsed with cold water and squeeze out the garlic and herbs chopped.

Roasted vegetables and tomatoes cut into large cubes, mix with onions, garlic, greens, salt, add spices. Season with a mixture of olive oil and lemon juice.
