Cut onion into thin half-rings. Mix water, vinegar, ginger and mint. Pour the onion and leave to the side (stir periodically).

Beet wash well, put in a heatproof dish with a lid. Put in the microwave oven (this is the main secret of quick cooking of this dish). At a power of 800, for 10 minutes.
