Cooking
First you need to brine the salmon. I took the frozen pieces. very conveniently, it is already sliced, no need to cut, and the price is much cheaper. Salmon to defrost, add the chopped dill, half of the beam.
Pepper slightly crushed in a mortar. If there is pink pepper, it also add.
Of lemon juice, salt, sugar and oil to make a marinade.
Add the peppers and the marinade into the fish, stir and leave to marinate. I leave for a couple of hours.
To prepare the dough. Sift buckwheat and wheat flour. Wheat - 2 tablespoons is added only to give at least some adhesiveness test, as in buckwheat gluten is absent. In the sifted flour add sugar, salt, eggs. In a glass of warm milk dissolve yeast, add to the dough. Mix well and bring to the desired consistency, adding warm water (about 1/2 Cup or a little more). Leave the dough to rest for 30 minutes.
To fry the pancakes. The dough fills the pan pretty bad, it is easier to fry small pancakes in a small frying pan. Or on the crêpe maker.
Turned over hard, torn and scattered. But a certain skill, everything turns out fine.If it does not, it is better not to spoil all the pancakes and fry on low heat on one side only.
Prepare the sauce by mixing sour cream, mayonnaise, horseradish, and remaining dill (1/2 bunch).
Serve hot pancakes with the sauce and marinated salmon. This is a VERY tasty and satisfying. If two, then it turns out a hearty dinner. But if for 4 people, good food:) Bon appetit!
