Cooking
Take the pork knuckle, my, of necessity, clean the skin, dry it with a paper towel. Garlic and ginger root peel and cut into pieces.
With a sharp knife in the knuckle do cruciate incisions. Every piece of ginger and garlic doused in salt and force be them the knuckle.
Put the knuckle in the water, add salt, mix of pepper and Bay leaf, bring to a boil, remove foam and cook on low heat for 1.5 hours.
Prepare the marinade. Mix soy sauce TM Kikkoman, mustard with seeds of grain, vegetable oil and chili pepper flakes.
Ready-cooked pork shank put in convenient for baking form. I like one-off forms. On the bottom pour a little broth, grease evenly all the knuckle marinade. Put in heated to 180 degrees oven, bake 30 minutes, occasionally basting with marinade with broth.
