Cooking
Cut the ham into cubes the size of Penne.
Zucchini (or young zucchini) wash, dry, cut into cubes the size of the foam.
In a saucepan, heat olive oil. Fry the ham. Add zucchini and sauté all together.
Grate cheese on a fine grater. Pins boil in boiling salted water according to instructions on the package.
Cream beat egg yolks, add Parmesan cheese (optional to leave a little for topping), stir and add to the pan. Simmer stirring for 3 minutes.
Add the foam. Mix well. Warm up and serve immediately.
