Always loved the cheesecake from the restaurant, and I never thought that I could sort of play with his own hands, turned out pretty good and tasty!!! Quite laborious but it's worth it!!!

Cooking
ALL PRODUCTS MUST BE AT ROOM TEMPERATURE. Grind the cookies and add melted butter.
Put the cookies in the form (with removable Board) on the bottom and sides, properly tamping, my form has a diameter of 24cm. Put on 10 minutes in a preheated oven (160 degrees), remove and chill.
Whisk the cheese with the icing sugar until smooth, important not to oversaturate a lot of air otherwise the cake will swell and crack when baking. So simple whisk briefly with a whisk. Gradually add the cream and eggs (one at a time, gradually), now the whole mass just stir, not whisking, but carefully.
Pour cheese mass in the form.
