Chicken fillet with sun-dried tomatoes, bacon and mozzarella
Very soft, tender and juicy chicken with aromatic tomato pesto and a crust of bacon and mozzarella.

Ingredients

  • Chicken fillet

    500 g

  • Bacon

    150 g

  • Mozzarella

    200 g

  • Parmesan

    50 g

  • Sundried tomatoes

    10 piece

  • Pine nuts

    25 g

  • Lemon juice

    3 Tbsp

  • Mint

  • Salt

Chicken fillet recapture, salt and put in a baking dish.

To prepare the tomato pesto. To do this in a blender grind the Parmesan cheese, add sun-dried tomatoes, pine nuts and lemon juice. Then, whisking, add a little olive oil (that which had tomatoes) until a homogeneous paste.

Lubricating layer chicken tomato pesto on top in a single layer lay the bacon, sprinkle mint leaves and cover with a layer of mozzarella.

Bake in the oven at 200 °C for about 25-30 minutes until Golden brown. When serving, garnish with mint leaves.
