Description
Today is my son birthday! He is 13 years old! Unfortunately my favorite birthday boy flatly refused the cake, saying that he is not small and the cake it is absolutely not necessary. But what mom will stop such frivolous excuse? So I found out - has combined two of his most favorite dessert - brownie and cheesecake - and added favorite cookies. Turned out no worse than cake, even with such minimal decoration! Moreover, it is very, very tasty!

Cooking
Let us brownies. First, take out the detachable form 26 cm in diameter and carefully obvolakivaet her foil. Better in several layers. Foil should be large enough piece, if you use several small, water will seep into the connection. I have a one piece silicone form with a diameter of 26 cm and sometimes I put a split form that I use for baking. Is also good insurance against water when baking cheese. Form grease with oil.
Melt the butter with the chocolate in a water bath or in a microwave.
Carefully whisk eggs with sugar and vanilla sugar. Add melted chocolate with butter and decrease the speed of the mixer.
Sift flour with salt and mix on the lowest speed with a mixer or carefully with a spatula.
The dough was amazing - airy like a mousse. Put it into the form and bake in a preheated 160 degree oven for 25 minutes. I only use the ring from the form, therefore, under the form, enclose a small baking tray, to easily move the form in the oven.
Now make the cheesecake. Whisk cream cheese with sugar, vanilla sugar and corn starch. Add the eggs one by one every time a good beat.
Add the cream, reduce the speed of mixer, stir but don't whisk.
Spread on brownie layer cookies. The cookies spread cottage cheese mixture, but some of it, about a Cup left.
Melt 60 g of chocolate, mix with all the leftover part of the cheese mixture. The chocolate part with a spoon put on top of the white part and make a knife stains, gently stirring both mixtures.
Put the form in a larger baking pan and half of the shape (or slightly above) filled with hot water. Bake in a preheated 160 degree oven for about 1 hour and 15 minutes. Remove from the oven and leave to cool down, put in the refrigerator for at least 4 hours.
Carefully transfer cheese to a serving platter, remove the Board from the form. Grind the biscuits with a rolling pin you can blender. Edge and sprinkle with crumbs. Before this coat the 2 tbsp. of cream, but not necessarily, cookies, and without it, well kept.
