Biscuit baskets with a live jam
Sweet, juicy, fragrant, and delicious lemon sponge tarts with orange-krygovy covim "alive" jam. Jam is both the impregnation and filling, which is very convenient. Even in the absence of special moulds, very tasty just pour the biscuit pieces to the jam. Help yourself!!! For jam I used cane sugar, but all the previous years I've made it with white sugar. The result is pleasing anyway!!!

Ingredients

  • Chicken egg

  • Lemon

  • Gooseberry

    650 g

  • Orange

Prepare all the ingredients. Sift the flour. Of this number ingredients I got 12 baskets and 6 cupcakes. Beat the eggs with sugar and pinch of salt until resistant foam.

To remove the zest from one lemon and squeeze the juice.

Add to egg mixture the zest and juice of lemon and mix gently.

Add in a few receptions sifted flour. Gently knead the dough. Pour it into special molds or one large form, pre-lubricated with form oil.

Bake in a preheated 160* oven for 20-25 minutes for small ramekins and 35-40 minutes for large form. Test the cake for readiness by tapping on the surface of the sponge, it should bounce. Ready baskets remove from the oven, cool slightly and flip on the grill. Allow to cool and rest.

For "live" jam. Wash the gooseberry, Pat dry. Scissors to cut the stems. Wash the oranges. Oranges cut into convenient pieces and remove seeds.

Mince the gooseberry. Add part of sugar.

Mince the oranges. Add the rest of the sugar. Further actions depend on Your desire. You can put the jam jars in layers or mix orange and gooseberry mass and lay on the jars. If you want you can boil the jam for 5 minutes or boil until desired consistency. I like all the options. For this recipe I mixed mass together.

Spread jam with a spoon in the basket. Syrup soaked sponge cake and pieces of fruit will remain on top. Enjoy your tea!!!

If You do not have such molds, it does not matter. Delicious pieces of sponge cake, covered with jam!!!
