Description
Socca is a flatbread originating from nice. According to legend, she appeared during the siege of nice by the Turks in 1543. It's baked in huge pans in ovens or on the street. Very tasty and hearty, tasted with summer vegetables such as eggplant, roasted peppers, olives, or wine.

Cooking
For this recipe take the chickpea brand "Mistral".
Grind them into flour in a coffee grinder or processor.
Add water, 3 tbsp olive oil, salt, pepper. Optionally, you can add the Provencal herbs.
The dough density is obtained as for pancakes. Let stand for 1 hour.
Since the oven we have, and meter pans too, preheat the oven to 220-240*C, or in the mode "grill". Pour the dough on a baking sheet or form. I have a form for pizza baking 34cm.
Bake for 5-10 minutes. On top of the cake should be well browned and become crispy, and the bottom to remain soft. To taste warm.
And here is the famous pusher of sochoi Teresa.
And this small restaurant makes the most delicious Socko in nice.
