Description
Dolce di San Michele. Such cakes do in the city of Bagnacavallo (province of Ravenna), 29 September during the feast of St. Michael who is the patron Saint of this city!

Cooking
To prepare dough. Sift in bowl the flour, mix it with half Cup of powdered sugar and 1 tsp grated lemon peel or orange. Add yolks and softened butter.
Quickly knead the dough. Roll it into a ball, wrap in clingfilm and put in the refrigerator for at least 30 minutes.
Roll the dough into the reservoir and lay a round shape, pre-greased and floured. I made a few mini cakes in small shapes. So cut small circles and put them on the bottom of the muffin pan. Bake the dough in the oven at 180 deg. 5-10 minutes until soft.
To whip the cream. Cottage cheese mix with the remaining icing sugar and grated zest of lemon or orange. Add to it the cream. Beat egg whites to hard peaks.
Gently mix whipped egg whites with cottage cheese mixture. Put on layer of dough. And bake in the oven for another 15-20 minutes until fully cooked.
The finished cake (cakes) to cool. The tip to coat apricot jam. Decorate with nuts and fruit. And again the fluff on top of the jam. It turned out that ukrashatel from me not so hot... sorry Italians)))
