Cooking
Prepare the dough: pour the flour slide, make a deepening in the middle. In it add: softened butter, sugar, yolks, lemon zest and a pinch of salt.
Knead the dough. Now wrap it with cling film and send in the fridge for 30 minutes.
Now prepare choux pastry ("Choux"): in a saucepan pour water, add the butter and a pinch of salt. Put on fire and bring to a boil. Now add all the flour at once and stir with a blender. Put the mixture again on the fire, until it begins to fall from the walls and bottom of the pan (it happened to me almost immediately).
Remove from heat, let cool a bit. Add 1 tsp of sugar and one by one add the eggs, stirring the entire mixture in a blender.
Now you can prepare the cream. To the milk add the mixture from the bag with the cream and mix thoroughly until a homogeneous mass. After - put into the fridge.
Preheat the oven to 180 degrees (gas and up to 160). On the tray lay baking wax paper. Take out of the refrigerator our dough. Roll out 5mm thick and cut out the ovals. Lay the ovals on a baking sheet.
Put our choux dough in a pastry bag and in the form of eight begin to carry shape on top of the ovals.
Ship all in the oven for 30 minutes (observed for the test!!!).
Take out of fridge cream. In one part of the cream add the melted chocolate and stir. Fill a pastry bag with the white cream and fill the one hole in the top eight, on top of the cream put dried fruits. Chocolate cream - the second hole. That's all! Cookies are much tastier through 12 hours. Bon Appetit!!!
