A very popular dessert in Portugal - rice with milk and cinnamon. Preparing both at home and in restaurants. With first glance may seem a milk porridge, but it's not.

Put in a saucepan the rice, add cinnamon sticks and zest (finely cut half of a lemon). Pour 2 cups water and put on fire to boil.

Then separate the yolks from the whites. Paramasivam yolks until smooth and slowly pour into rice, stirring immediately so that the yolks don't curdle
Well whisk the whites (sugar NOT to add!!)
Add the whipped whites into the rice and stir gently
