Description

Roll of chestnuts from Sophia Loren
Easy to prepare and very-very unusual treat. The recipe for this dessert kindly given to me by a wonderful cook on our website of Nina-Superbubble, that she declared my sincere gratitude! It was published in a magazine almost 30 years ago, a clipping from which miraculously survived to the present day. I'm prepared to defer until next chestnut season, and suddenly... lo and behold, the store discovered the chestnuts. Could not pass up. As you understand from the name, the authorship belongs to the lovely actress and well-known foodie, irresistible Sophia Loren, who also is a grandmother, and I do not exclude that "super".

Cooking

step-0
In my version of chestnuts purchased ready. If chestnuts are raw, you need to cut the shell, and to pre-roast them in the oven for 10 minutes at 200 degrees, then cool slightly and peel.
step-1
Put the peeled chestnuts in a small saucepan, place the sugar and adding whole sticks of vanilla.
step-2
Pour milk.
step-3
Cook on medium heat for 20 minutes (what will be the flavor — do not pass!..)
step-4
Pour in a separate Cup of excess milk (do not empty), throw sticks of vanilla, chestnuts and mash with a potato masher into a puree, adding as needed milk from a mug. The mixture should be thick but not too dry.
step-5
Add liqueur. In this case, is "Cassis" (a black currant liqueur). Stir.
step-6
Confectionery (baking) paper, grease with butter and spread on her brown mass of a uniform rectangular layer thickness of about 1 cm.
step-7
On top of the jam. Black currant jam I have not found, so I used close have him taste range confiture of cherries.
step-8
Gently roll the layer into a roll.
step-9
Close the baking paper and allow to soak in the refrigerator for about an hour.
step-10
Ready roll cut into slices and served with tea.
step-11
A great addition would be the whipped cream. Suggest unsweetened, otherwise the dessert will be too sweet. Although, as they say, on taste and color...
