Beat the yolks with sugar, mix with flour and cocoa (if desired). Beat the whites until stable peaks and gently mix with the yolk batter. Pour into a rectangular shape, lined with oiled paper of thickness 1.5-2 cm and bake until tender (25-30 min. at a temperature of 200 deg.). Allow to cool in the form.
