Description

Potato dumplings
Dumplings flour or potato product that is similar to the soaked white bread. The national dish of Czech and Slovak, Austrian and Bavarian cuisine. The name was given in the Czech language in the early nineteenth century. Classic recipes for dumplings come from Vienna recipes of the XIX century, which was later improved in the Czech Republic Dumplings come in several types (with fruit, of potatoes and dough). I offer you a recipe of my favorite dumplings of potatoes.

Ingredients

  • Potatoes

    800 g

  • Chicken egg

    1 piece

  • Flour

    250 g

  • Bacon

    40 g

  • Onion

    150 g

  • Salt

    1 Tbsp

  • Parsley

Cooking

step-0
Take 800g of potatoes, wash, peeled
step-1
RUB on a small grater type "star". Or in any other way, as long as the result was the consistency of mashed potatoes (I did this in a food processor for lack of a grater)
step-2
Drain the juice, which immediately begins to stand out
step-3
Add 1 egg, 1/2 tbsp of salt.
step-4
There is 250 grams of flour and stir with a spoon. It turns out the dough is of medium thickness
step-5
A teaspoon dipped in cold water, we collect the dough and drop into boiling salted water (1/2 tsp salt in medium saucepan)
step-6
Cook for 6-8 minutes. Immediately stir once
step-7
While the dumplings cook, make fried. This part is very important, without it, the dumplings will not turn out so delicious. So, take prescription 40 grams of fat with the meat, a brisket or thin cuts, where there is more meat than fat. I love bacon, so take at least 3 times more. Finely chop it. Cut onion to your taste, you can into 4 pieces, and then grind like I did, you can half rings, you can generally shallow.
step-8
Fat fry
step-9
Add the onion and fry until Golden brown
step-10
Combine dumplings with fried.
step-11
Very tasty sauerkraut. I like more sour cream. But the recipe to eat without. The dish itself is very hearty and requires no additional meat to it. Try it, I hope you will also like this great casual dish
