Cooking

step-0
Eggs, 1 tablespoon of sugar, sake and 1 tbsp soy sauce stir with a fork until smooth. Sake can be replaced with vodka. Ideally the egg mixture, strain through cheesecloth.
step-1
I scrambled in the matching size to the sheets of nori rectangular shape. You can fry it in a pan and then cut into strips.
step-2
Rice for sushi rinse 4 - 7 times and soak in cold water ( 2.5 cups) for 15-20 minutes. Put on high heat and bring to a boil. Reduce the heat to minimum and cook the rice under the lid for 12-15 minutes. Give the rice to rest after cooking under the lid for another 10 minutes. After that, roaming the rice in a wide wooden (glass, porcelain) dishes.
step-3
For the rice filling, mix rice vinegar, sugar, salt and put on fire. Heated until the sugar is dissolved, remove from heat and allow to cool. Rice dressing is added gradually to the hot rice and stir with a wooden spatula from bottom to top. The rice I split into 4 parts (only used three).
step-4
On a cutting Board, put a sheet of nori (I have 18*20 cm) on top of distributed rice (1/3) and put the diced red pepper and salmon. Cover some rice.
step-5
Lay the next sheet of nori and press it with a Board placed on top. On nori put the rice and scrambled eggs.
step-6
Top another sheet of nori, rice and diced cucumber and avocado (avocado immediately after cutting sprinkle with lemon juice, not darkened).
step-7
Sprinkle rice with sesame seeds and cover with the last sheet of nori.
step-8
Put on top of a cutting Board and a heavy pan. Leave for 15-30 minutes.
