Apple pie
I very rarely do cakes don't really process this much pleasure, despite my immense love for cooking. And yet I have the recipes which cook for many years. I first made this cake 25 years ago and still I have it one of my favorites. Thin crust, juicy candy apples, amazing selection of spices, the ease of preparation. All this won me over a quarter of a century ago and makes cooking it again and again. A simple looking cake, but with a very strong flavor, simplicity of execution on the brink with elegance of taste.

First, let's talk about the ingredients. Apples need a firm, tart and juicy. Preferably of the same size, so the cake turned out beautiful. I have apples from the garden and not particularly beautiful, but the rest of the requirements are met. Firm, juicy and sour :) Now, on account of flour. 275 gr. is the original recipe, but I have in 25 years that I bake this pie, there were no such scales to measure out the exact amount. Plus or minus 50 grams a shot deemed not to be :). Here is a guide only as more than 300 and not less than 250 grams. About spices. Cinnamon teaspoon without slides. Here it is-it is better not to report than to overdo it. So very strong her scent. Nuts to your taste, the original 50 grams, and I take more - 60-70 grams. If you do not like cloves, it is better not to put at all. Although it is, of course, gives the highlight. Now, like everything, start cooking.

Flour, powdered sugar, one egg and softened butter quickly make dough. Roll up in foil and in the fridge for two hours. Again, this is the original, but I still don't know why so much time to cool off? I usually keep an hour, well, one and a half maximum.

While the dough is resting, make the topping. Walnuts grind in a blender into fine crumbs. It is better to use burst mode, so as not to miss the moment when the nuts instead of crumbs will turn into nut butter. From the lemon using a grater to remove the zest. Several constellations of cloves pounded to powder. In a bowl, mix the cinnamon, zest, vanilla sugar, peanut crumbs and powdered cloves. The aroma in the kitchen will go just awesome!

From lemon squeeze the juice and pour into a large bowl. From apples to remove the seeds and cut into slices. All folded up in a bowl and mix well with lemon juice. I think yesterday was baking this pie for the first time. And it's been so many years... youth is... but it's not so bad. The trouble is that the old age passes too.
