In a large skillet at medium-high temperature to heat the olive oil. Add the mushrooms and fry until brown, season with salt and freshly ground pepper. Remove from heat, add sherry. Then you need to heat the water over high heat for about 2 minutes, pour into a bowl, add chopped thyme and allow to cool. This can be done in advance (for the day) and store under cover in the fridge.
Choose bulbs with Kol'tsova surface unchanged, that is, to not have 2-3 rings on the same bulb. Clean and cut the onion into thick rings, about 0,7 cm.
1/4 Cup olive oil heated over low heat in the same large frying pan. Add onion rings in a single layer (we'll get from 2 to 3 batches), cover the pan and cook until tender, but not colouring, for about 10-15 minutes. Using a thin blade (my and another convenience was that the oil was dripping from it, and the bow remained low-fat), carefully transfer the onion onto the surface to cool, to touch the bow no longer need it. Pour the remaining oil in measuring Cup and add to 1/4 Cup and cooled, this oil is then used for the test.
Preheat the oven to 400 F = 220 C (my oven is old, so I heated almost to the maximum). Then a special form of cut circles of 5 cm in diameter and 1.5 cm thick (here I translated wrong and it took 0,5 of something like 0.5 cm really made them still more - 1 cm). The circles should be as close to each other. The form you need to press when you get mushrooms, not to turn around. And everything will be OK...:)
Put tortillas on a baking sheet at a distance of 1 inch from each other. Lubricated cream on top of each tortilla spread our fried onion rings, pressed your fingers down and put in preheated oven. You need to bake to a beautiful brown color, and until they become firm to the touch - about 35 minutes.

"Sprinkle each muffin with a pinch of Fleur de SEL and insert a small sprig of thyme in the center of the onion rings, after making a small hole with a toothpick... eh... who knows what "Fleur de SEL"?? on pictures it looked like large grains of our coarse salt... just... when it was already guessed... maybe it was salt... Thyme I didn't have this time (and never found)... fried onions I also did not have (however, I'm not upset...), and the next batch of waste test pellet was pressed with just sprigs of dill and sprinkled with mustard seeds.
