Viennese pastries
For a week children are bombarded with requests for something to bake. And I so lazy.... Went through the net, saw the recipe for "Vienna rolls". Low cost but great result. On the "Cook" is a recipe for "Vienna rolls" Irina (FEDERAL). But this recipe is very different from her version. I bring to Your attention.

Ingredients

  • Yeast

    5 g

  • Water

    310 ml

  • Flour

    600 g

  • Fat

    2 Tbsp

  • Sugar

    2 Tbsp

  • Salt

    1.5 tsp

  • Egg white

    2 piece

1. Dissolve the yeast in 50 ml warm water, let stand for 5 minutes. Add the remaining water and sieve 180 - 300 g of wheat flour. Add sugar , mix well adding the salt and fat. Whip the whites to soft peaks and add to the batter, gradually adding remaining flour. Knead with mixer on low speed or with your hands the dough until until it becomes elastic.

2.Form the dough into a ball and place in an oiled bowl. The dough should be fully smazano oil. Cover with plastic wrap and leave to rise in a warm place ( 26C for 1 hour). Punch down dough again and leave to rise for 1 hour.

3.Flatten the dough into cords and "curl" "snails" (you can just roll into balls), put it in the paper on rastenii 5 cm apart , cover with film and leave to rise to Put the empty pan in the oven and heat to 220 C... Put in the hot oven dishes with boiling water ( about a liter) and birthnote the walls of the oven with water.. Grease muffin beaten water egg yolk,or oil,and with paper to gently transfer to the hot baking tray (for lack of a paper laid out on the foil). Bake the buns for 15 minutes without opening the oven. After 15 minutes,remove the dish with water and bake for another 5 - 7 minutes until Golden brown.
