Salad of roasted vegetables
Escalivada is a Spanish dish of roasted vegetables. Perfect for those wishing to lose weight. Can be served as a side dish to meat or as a separate dish, cold and hot.

Ingredients

  • Eggplant

    1 piece

  • Black pepper

    1 piece

  • Onion

    1 piece

  • Vinegar

    1 tsp

  • Olive oil

    2 Tbsp

Eggplant, red pepper and a whole onion bake in the oven for 30 min. T 200*, cool, peel and hand split into thin strips, onion baked to cut. Olive oil shake of vinegar and salt, pour over vegetables.

For salads or cold appetizers to serve with greens. You can complement any cold appetizer - goes well with all products.
