It is an ancient dish born in Lyon. According to researchers, the name is because the weavers, receiving a low fee for the processing of silk, this dish has replaced the brains of a lamb that they could not afford. The question here is only about the cheese and the cheese, well-beaten with salt and pepper, flavored with chopped shallots and herbs, and white wine and olive oil. And, despite the fact that the snack is quite budget, it looks great for the holiday table and fascinates with its taste. This dish can be served in a deep dish as a snack or at the end of the meal, when the time comes "cheese plate" with grilled bread slices, crackers or chips.
