Cheesecake Red velvet
Today I want to share another option for cheesecake. This time on the grounds of the cake Red velvet. Tasty, sweet with the scent of strawberries. Nobody remained indifferent. Come on in, help yourself!!! Just want to note that I do not have very detailed step by step photos. This is due to the fact that the prepared cheesecake for the Easter Holidays. And because there was no cooking one dish, respectively, and lost sight of photography, for that I apologize. However, I will try to compensate for description of the process.

Start with the basics cheesecake. Grind cookies and nuts. Melt the butter. To combine the crushed cookies and nuts, adding melted butter, mix well until the unification). You can also add 1 teaspoon of cocoa (I'm in a hurry forgot about it). In shape (I'm a 26 cm silicone, it is better to take detachable) to lay the Foundation and thoroughly compacted. Mix Mascarpone cheese with sour cream and powdered sugar and whisk. Then add eggs one at a time, after each beat until the unification of the mixture. Get the form from the refrigerator and spread on the basis of curd. Send the form in a preheated 180 degree oven and bake cheese 40-45 minutes (I baked it in a water bath). Ready cheese I left to cool in the oven with the door ajar. The cooled cheese put it in the refrigerator for 2 hours.

Prepare strawberry mousse. Strawberries washed and cut into cubes. Leave a few pieces for decoration. Gelatin pour cold water in the ratio 1:6 and leave to swell. Then dissolve it in a water bath (do not boil). Melt the chocolate and cool to room temperature. Using a mixer whip the cream and add condensed milk, melted chocolate and half of the sliced strawberries.

Add red food coloring and dissolved and cooled gelatin all is well whipped. The mousse is ready. Take out the form with the cheesecake out of the fridge. Spread the remaining slices of strawberries on the cheesecake layer and spread on top of strawberry mousse. To knock the form on the table for a more even distribution of mousse across the surface.
