Soft coffee ice cream
Ice cream is a sweet frozen mixture of milk products with different additives. In Ancient China and the ancient world, the snow or pieces of ice mixed with chopped fruit. It is believed that Europe learned about ice cream from Marco Polo. A modern composition of ice cream with milk and sugar was invented in a Paris cafe "Tortoni" in the end of XVIII century. Surely you know and love ice cream, the recipe also invented in France. Offer you a recipe of soft coffee ice cream. Not too sweet, very velvety, with a light coffee bitterness. Ingredients

  • Instant coffee

    1.5 Tbsp

  • Water

    60 ml

  • Sugar

    60 g

  • Yolk egg

    2 piece

  • Cream

    200 ml

Instant coffee fill with boiling water (1.5 tbsp) and stir thoroughly

Fill a large bowl with cold water and set aside. Pour the sugar in a small saucepan, fill with cold water and put on medium heat. Cook, not stirring, until the moment when the bubbles of the boiling syrup will become large, and the syrup takes on a reddish-brown color. Remove from heat and immediately put in a bowl with cold water to stop the cooking of the caramel, otherwise it will become bitter.

Yolks, beat with a mixer in the foam

Still whisking in a thin stream pour hot caramel syrup. Whisk until thick.

Pour in the dissolved coffee and stir.

Whisk in a separate container cold cream

Combine the cream with coffee-caramel mixture and stir with a spatula

Pour mixture into tray and put in freezer for 1.5 - 2 hours. Not much ice cream freezes due to the caramel syrup.

Put the mass into a container for whisking and whisk for 1 minute on high speed of mixer. Weight slightly brighten.

It remains to decompose the mass with a spoon and put it in the freezer for 1 hour.
