Bread in the Mediterranean
This bread is so simple to make and is so delicious that you'll never want plain bread. It had happened to me. This recipe was the beginning of my obsession with baking homemade bread.

Ingredients

  • Water

    600 ml

  • Yeast

    15 g

  • Honey

    1 tsp

  • Flour

    700 g

  • Salt

    1 tsp

  • Olive oil

    4 Tbsp

  • Basil

    1 tsp

  • Tomato paste

    1 Tbsp

  • A mixture of spices

    1 Tbsp

  • Bacon

    4 slice

  • Sundried tomatoes

    1 Tbsp

  • Olives

    12 piece

  • Olive oil

    1 Tbsp

Cooking

Dissolve yeast in Cup of warm water and add honey.When the yeast begins to foam,pour them into the flour,add the salt,olive oil, 4 tbsp Basil,and remaining water.Mix well to form a soft dough.Knead until dough become elastic and without lumps.If it sticks to hands,add a little flour.Let it come for about 1 hour,until its volume will increase in 2 times.Then "drop" the dough and knead again for 2 minutes.

Roll out the dough into a large circle on a baking sheet or pizza pan.Spread the tomato puree and sprinkle with mixture of dry herbs (thyme,rosemary,Bay leaf,Basil-all to grind),I have Vegeta spiced with Mediterranean herbs.On top lay the slices of bacon (I cut small cubes),sun-dried tomatoes and olives.At the end drizzle with olive oil 1 tbsp. let rise another 15 minutes.

Bake in the oven for 25-30 minutes,until the bread becomes crisp and brown.

The bread is delicious by itself,but in addition to tomato soup is excellent!
